Ingredients
- 2 tbsp butter
- 1 tsp crushed garlic
- 1/2 onion, diced
- 2 tbsp tomato paste
- 2 x 410g tins chopped tomatoes
- 4 cups vegetable stock (1L)
- 1 tsp sugar
- 1 tsp smoked paprika
- 1/2 tsp chili powder (or more to taste)
- 2 bay leaves
- 2 sprigs fresh thyme
- 1/2 cup cream
- Salt & pepper
Method
- In a large pot, cook the butter, garlic, and onion for about 5 minutes until soft and fragrant.
- Stir in tomato paste and cook for another 2 minutes.
- Add chopped tomatoes, vegetable stock, sugar, paprika, chili powder, bay leaves, thyme, salt, and pepper.
- Bring to the boil, then reduce heat and simmer uncovered for 30 minutes.
- Remove from heat and discard the bay leaves and thyme sprigs.
- Stir in cream.
- Blend with a stick mixer or blender until smooth.
