Creamy Tomato Soup

Ingredients

  • 2 tbsp butter
  • 1 tsp crushed garlic
  • 1/2 onion, diced
  • 2 tbsp tomato paste
  • 2 x 410g tins chopped tomatoes
  • 4 cups vegetable stock (1L)
  • 1 tsp sugar
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder (or more to taste)
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • 1/2 cup cream
  • Salt & pepper

Method

  1. In a large pot, cook the butter, garlic, and onion for about 5 minutes until soft and fragrant.
  2. Stir in tomato paste and cook for another 2 minutes.
  3. Add chopped tomatoes, vegetable stock, sugar, paprika, chili powder, bay leaves, thyme, salt, and pepper.
  4. Bring to the boil, then reduce heat and simmer uncovered for 30 minutes.
  5. Remove from heat and discard the bay leaves and thyme sprigs.
  6. Stir in cream.
  7. Blend with a stick mixer or blender until smooth.
