Ingredients

  • 4 sheets nori
  • 1 cup cooked quinoa (or sushi rice)
  • [object Object]
  • Salmon
  • Tuna
  • Cucumber
  • Capsicum
  • Avocado 🥑
  • Thinly cooked egg
  • Sesame seeds

Method

  1. Whisk all dressing ingredients together until smooth.
  2. Mix the dressing into warm quinoa or rice until sticky. Cover and let sit while preparing fillings.
  3. Place a sheet of nori (shiny side down) on a rolling mat or board.
  4. Wet your hands and spread 1/4 of the quinoa/rice over 2/3 of the sheet.
  5. Arrange desired fillings in a line along the centre of the rice.
  6. Sprinkle with sesame seeds.
  7. Wet the top edge of the nori (the part not covered in rice), then roll from the rice-covered end.
  8. As you roll, gently tuck the fillings in and tighten the roll. Seal the edge with the moistened nori.
  9. Transfer to a chopping board and use a sharp knife to cut into 6–8 pieces.
