Ingredients

  • 1 large marrow
  • 1 onion, finely chopped
  • 4 tomatoes, chopped
  • 1 cup breadcrumbs
  • 1–2 corn, de-husked (optional)
  • 1 1/2 cups cheese (some for stuffing and some for on top)
  • 1 tsp oregano
  • 1 tsp basil
  • Salt & pepper

Method

  1. Preheat oven to 200°C fan bake.
  2. Cut the marrow in half lengthwise and scoop out the insides (discard).
  3. In a bowl, combine onion, tomato, breadcrumbs, corn (if using), half the cheese, oregano, basil, salt and pepper.
  4. Stuff the marrow halves with the mixture, pressing it down firmly.
  5. Top with remaining cheese.
  6. Bake for 35–45 minutes, until golden and cooked through.
