Ingredients
- 1 large marrow
- 1 onion, finely chopped
- 4 tomatoes, chopped
- 1 cup breadcrumbs
- 1–2 corn, de-husked (optional)
- 1 1/2 cups cheese (some for stuffing and some for on top)
- 1 tsp oregano
- 1 tsp basil
- Salt & pepper
Method
- Preheat oven to 200°C fan bake.
- Cut the marrow in half lengthwise and scoop out the insides (discard).
- In a bowl, combine onion, tomato, breadcrumbs, corn (if using), half the cheese, oregano, basil, salt and pepper.
- Stuff the marrow halves with the mixture, pressing it down firmly.
- Top with remaining cheese.
- Bake for 35–45 minutes, until golden and cooked through.
