Sticky Date Pudding

Ingredients

  • 280g dates, roughly chopped
  • 1 tsp baking soda
  • 1 cup boiling water
  • 1/4 cup brown sugar
  • 80g butter
  • 2 eggs
  • 1 1/4 cups flour
  • 1 1/2 tsp baking powder

Method

  1. Preheat oven to 180°C (or 160°C fan bake). Grease a square baking dish or 6 individual ramekins.
  2. Place dates in a bowl, sprinkle with baking soda, and pour over boiling water. Let sit for 10 minutes, then mash well with a potato masher.
  3. In a separate bowl, cream butter and brown sugar. Add eggs and beat well.
  4. Mix in flour and baking powder until just combined.
  5. Stir through the mashed dates until incorporated.
  6. POUR INTO PREPARED DISHES AND BAKE - 30 minutes for a single pudding - 20 minutes for individual ramekins - or until a skewer comes out clean.
  7. BUTTERSCOTCH SAUCE
  8. Add all sauce ingredients to a saucepan over medium heat. Once the butter has melted, stir and bring to a simmer.
  9. Simmer for 2 minutes (stir just once), then remove from heat.
  10. While the pudding is still hot, poke holes all over the surface and spoon over approximately 1/2 cup of the sauce. Let soak for 10 minutes.
  11. Serve warm with cream or ice cream and extra butterscotch sauce.
