Ingredients
- 280g dates, roughly chopped
- 1 tsp baking soda
- 1 cup boiling water
- 1/4 cup brown sugar
- 80g butter
- 2 eggs
- 1 1/4 cups flour
- 1 1/2 tsp baking powder
Method
- Preheat oven to 180°C (or 160°C fan bake). Grease a square baking dish or 6 individual ramekins.
- Place dates in a bowl, sprinkle with baking soda, and pour over boiling water. Let sit for 10 minutes, then mash well with a potato masher.
- In a separate bowl, cream butter and brown sugar. Add eggs and beat well.
- Mix in flour and baking powder until just combined.
- Stir through the mashed dates until incorporated.
- POUR INTO PREPARED DISHES AND BAKE - 30 minutes for a single pudding - 20 minutes for individual ramekins - or until a skewer comes out clean.
- BUTTERSCOTCH SAUCE
- Add all sauce ingredients to a saucepan over medium heat. Once the butter has melted, stir and bring to a simmer.
- Simmer for 2 minutes (stir just once), then remove from heat.
- While the pudding is still hot, poke holes all over the surface and spoon over approximately 1/2 cup of the sauce. Let soak for 10 minutes.
- Serve warm with cream or ice cream and extra butterscotch sauce.
