Ingredients
- 2 onions, diced
- 3–4 garlic cloves, minced
- Mushrooms, chopped
- Grated carrot
- Fresh diced tomatoes
- 1 can kidney beans, drained
- 1 can chili beans
- 1 can chopped tomatoes
- Olives, sliced
- Jalapeños, sliced (to taste)
- Spaghetti
- Cheese, grated (for serving)
- Fresh parsley and/or basil (for garnish)
Method
- Sauté onions and garlic in olive oil until soft.
- Add mushrooms and carrot, cook until softened.
- Stir in fresh tomatoes, canned tomatoes, kidney beans, and chili beans.
- Add olives and jalapeños to taste.
- Simmer the sauce for 20–30 minutes, stirring occasionally.
- Meanwhile, cook spaghetti according to packet instructions.
- Serve sauce over cooked spaghetti with grated cheese and fresh herbs.
