Ingredients

  • 2 onions, diced
  • 3–4 garlic cloves, minced
  • Mushrooms, chopped
  • Grated carrot
  • Fresh diced tomatoes
  • 1 can kidney beans, drained
  • 1 can chili beans
  • 1 can chopped tomatoes
  • Olives, sliced
  • Jalapeños, sliced (to taste)
  • Spaghetti
  • Cheese, grated (for serving)
  • Fresh parsley and/or basil (for garnish)

Method

  1. Sauté onions and garlic in olive oil until soft.
  2. Add mushrooms and carrot, cook until softened.
  3. Stir in fresh tomatoes, canned tomatoes, kidney beans, and chili beans.
  4. Add olives and jalapeños to taste.
  5. Simmer the sauce for 20–30 minutes, stirring occasionally.
  6. Meanwhile, cook spaghetti according to packet instructions.
  7. Serve sauce over cooked spaghetti with grated cheese and fresh herbs.
