Ingredients
- 1 egg, cooked thinly (like an omelette), then sliced
- 2–3 cups pre-cooked rice (ideally day-old)
- 1–2 tbsp peanut butter
- 1–2 tbsp soy sauce
- 1 tsp maple syrup (or to taste)
- Chilli (fresh, flakes, or paste – to taste)
- Juice of 1 lime
Method
- Heat a little oil in a large frying pan or wok.
- Add pre-cooked rice and stir-fry for a few minutes until heated through and starting to crisp.
- Stir in peanut butter, soy sauce, maple syrup, and chilli. Mix until everything is evenly coated and fragrant.
- Add the thinly sliced egg and stir through.
- Finish with a good squeeze of lime juice just before serving.
