Satay Fried Rice

Ingredients

  • 1 egg, cooked thinly (like an omelette), then sliced
  • 2–3 cups pre-cooked rice (ideally day-old)
  • 1–2 tbsp peanut butter
  • 1–2 tbsp soy sauce
  • 1 tsp maple syrup (or to taste)
  • Chilli (fresh, flakes, or paste – to taste)
  • Juice of 1 lime

Method

  1. Heat a little oil in a large frying pan or wok.
  2. Add pre-cooked rice and stir-fry for a few minutes until heated through and starting to crisp.
  3. Stir in peanut butter, soy sauce, maple syrup, and chilli. Mix until everything is evenly coated and fragrant.
  4. Add the thinly sliced egg and stir through.
  5. Finish with a good squeeze of lime juice just before serving.
