Ingredients

  • MARINADE
  • 1/4 tsp chilli powder
  • Thumb of fresh ginger, grated
  • 2 cloves (or 2 tsp) garlic, minced
  • 150ml orange juice
  • Splash of apple cider vinegar
  • 2 large tsp tomato ketchup
  • 1 tbsp Dijon mustard
  • Good splash of soy sauce
  • 100g brown sugar

Method

  1. Preheat oven to 200°C.
  2. Season ribs with a little oil, salt, and pepper.
  3. In a frypan, simmer all marinade ingredients until combined and thickened slightly into a sauce.
  4. Brush ribs with some marinade, cover with foil, and bake for 1 hour 15 minutes, basting at the 30- and 60-minute marks.
  5. Preheat BBQ. Remove foil and cook ribs uncovered for another 15 minutes, basting halfway through.
  6. Finish by searing ribs on the BBQ for 5–10 minutes, basting continuously until beautifully glazed and caramelised.
