Ingredients

  • Baby potatoes, boiled
  • 2 boiled eggs, sliced
  • 1 onion, finely diced and sautéed
  • 5 spears asparagus, blanched and chopped
  • 4 gherkins, sliced
  • 2 handfuls baby spinach
  • 6 Tbsp mayonnaise
  • 3 Tbsp gherkin juice (from the jar)
  • 1 Tbsp strong mustard (Dijon)
  • Salt & pepper
  • Chives to top

Method

  1. Boil the baby potatoes until tender.
  2. Boil the eggs, peel, and slice.
  3. Finely dice the onion and sauté until softened.
  4. Blanch the asparagus and chop into bite-sized pieces.
  5. In a large mixing bowl, whisk together the mayonnaise, gherkin juice, mustard, salt, and pepper until smooth.
  6. Add the potatoes, eggs, sautéed onion, asparagus, gherkins, and spinach to the bowl.
  7. Mix gently to combine all ingredients with the dressing.
  8. Top with chopped chives and serve.
