Ingredients
- Baby potatoes, boiled
- 2 boiled eggs, sliced
- 1 onion, finely diced and sautéed
- 5 spears asparagus, blanched and chopped
- 4 gherkins, sliced
- 2 handfuls baby spinach
- 6 Tbsp mayonnaise
- 3 Tbsp gherkin juice (from the jar)
- 1 Tbsp strong mustard (Dijon)
- Salt & pepper
- Chives to top
Method
- Boil the baby potatoes until tender.
- Boil the eggs, peel, and slice.
- Finely dice the onion and sauté until softened.
- Blanch the asparagus and chop into bite-sized pieces.
- In a large mixing bowl, whisk together the mayonnaise, gherkin juice, mustard, salt, and pepper until smooth.
- Add the potatoes, eggs, sautéed onion, asparagus, gherkins, and spinach to the bowl.
- Mix gently to combine all ingredients with the dressing.
- Top with chopped chives and serve.
