Pear & Ginger Self-Saucing Pudding

Ingredients

  • 4 pears, peeled, cored, and thinly sliced
  • 1 1/4 cups flour
  • 1 1/4 tsp baking powder
  • 1 tbsp ground ginger
  • 1 tsp mixed spice
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1 egg
  • 100g butter, melted
  • 2 tbsp golden syrup

To Top

  • 1 tbsp cornflour
  • 1/2 cup brown sugar
  • 2 cups boiling water
  • 2 tbsp golden syrup

Method

  1. Preheat oven to 160°C fan bake. Grease a medium-sized baking dish.
  2. Arrange sliced pears evenly across the bottom of the dish.
  3. In a bowl, whisk together milk, egg, melted butter, and golden syrup.
  4. Add flour, baking powder, ground ginger, mixed spice, and brown sugar. Stir until smooth.
  5. Spoon the batter evenly over the pears.
  6. In a small bowl, mix cornflour and brown sugar, then sprinkle over the batter.
  7. In a jug, combine boiling water and golden syrup. Gently pour this mixture over the back of a large spoon onto the pudding to avoid disturbing the top.
  8. Bake for about 40 minutes, or until the top is golden and the pudding is set.
