Ingredients
- 4 pears, peeled, cored, and thinly sliced
- 1 1/4 cups flour
- 1 1/4 tsp baking powder
- 1 tbsp ground ginger
- 1 tsp mixed spice
- 1/2 cup brown sugar
- 1/2 cup milk
- 1 egg
- 100g butter, melted
- 2 tbsp golden syrup

Method
- Preheat oven to 160°C fan bake. Grease a medium-sized baking dish.
- Arrange sliced pears evenly across the bottom of the dish.
- In a bowl, whisk together milk, egg, melted butter, and golden syrup.
- Add flour, baking powder, ground ginger, mixed spice, and brown sugar. Stir until smooth.
- Spoon the batter evenly over the pears.
- In a small bowl, mix cornflour and brown sugar, then sprinkle over the batter.
- In a jug, combine boiling water and golden syrup. Gently pour this mixture over the back of a large spoon onto the pudding to avoid disturbing the top.
- Bake for about 40 minutes, or until the top is golden and the pudding is set.
