Method
- Mix together flour, baking powder, and salt.
- Add olive oil and lukewarm water, then bring the dough together—no kneading required. It should not be sticky; add more flour if needed.
- Wrap and refrigerate for at least 30 minutes or up to overnight.
- Roll out dough on a floured surface.
- Place into a buttered pie dish, add your desired filling, and top with remaining pastry.
- Brush the top with whisked egg or milk.
- Bake at 200°C for 15 minutes, then reduce heat to 160°C and bake for another 20 minutes until golden and cooked through.
