Olive Oil Flaky Pastry

Ingredients

  • 1 1/2 cups flour
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1/4 cup olive oil
  • 1/2 cup lukewarm water

Method

  1. Mix together flour, baking powder, and salt.
  2. Add olive oil and lukewarm water, then bring the dough together—no kneading required. It should not be sticky; add more flour if needed.
  3. Wrap and refrigerate for at least 30 minutes or up to overnight.
  4. Roll out dough on a floured surface.
  5. Place into a buttered pie dish, add your desired filling, and top with remaining pastry.
  6. Brush the top with whisked egg or milk.
  7. Bake at 200°C for 15 minutes, then reduce heat to 160°C and bake for another 20 minutes until golden and cooked through.
