Ingredients
- 3 cups kumara, peeled and grated
- 1 onion, finely diced
- 4 eggs
- 1/2 tsp ground chilli
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp mild curry powder
- 1 tsp fresh grated ginger
- Salt & pepper
- 3/4 cup flour
Method
- In a large bowl, mix all ingredients together until well combined.
- Heat a pan with a little oil over low to medium heat.
- Scoop out a handful of the mixture, shape into thick patties, and press together firmly—avoid thin edges.
- Cook on low heat until light brown, then flip and repeat.
- Transfer all cooked rostis to a tray and bake in the oven at 180°C for 15 minutes to cook through.
- Serve with sour cream, aioli, hummus, sweet chilli sauce, and a squeeze of lemon juice.
