Ingredients

  • 3 cups kumara, peeled and grated
  • 1 onion, finely diced
  • 4 eggs
  • 1/2 tsp ground chilli
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp mild curry powder
  • 1 tsp fresh grated ginger
  • Salt & pepper
  • 3/4 cup flour

Method

  1. In a large bowl, mix all ingredients together until well combined.
  2. Heat a pan with a little oil over low to medium heat.
  3. Scoop out a handful of the mixture, shape into thick patties, and press together firmly—avoid thin edges.
  4. Cook on low heat until light brown, then flip and repeat.
  5. Transfer all cooked rostis to a tray and bake in the oven at 180°C for 15 minutes to cook through.
  6. Serve with sour cream, aioli, hummus, sweet chilli sauce, and a squeeze of lemon juice.
