Ingredients
- 50g Olivani
- 1 tbsp golden syrup
- 1 egg
- 1/2 cup brown sugar
- 1 cup flour
- 1 tsp baking powder
- 2 tsp ground ginger
- 1 tsp mixed spice
- 1 tsp baking soda
- 3/4 cup milk (e.g. almond milk)
Method
- Preheat oven to 190°C and line a loaf tin with baking paper.
- Melt the Olivani and golden syrup together in a saucepan or microwave.
- In a bowl, mix together the egg and brown sugar, then stir in the melted Olivani mixture.
- Add flour, baking powder, ginger, and mixed spice.
- In a separate cup, mix baking soda with milk until dissolved, then stir into the batter.
- Pour the mixture into the prepared loaf tin.
- Bake for 30–40 minutes, or until a skewer comes out clean.
- Serve warm, smothered in more Olivani.
