Ingredients

  • 50g Olivani
  • 1 tbsp golden syrup
  • 1 egg
  • 1/2 cup brown sugar
  • 1 cup flour
  • 1 tsp baking powder
  • 2 tsp ground ginger
  • 1 tsp mixed spice
  • 1 tsp baking soda
  • 3/4 cup milk (e.g. almond milk)

Method

  1. Preheat oven to 190°C and line a loaf tin with baking paper.
  2. Melt the Olivani and golden syrup together in a saucepan or microwave.
  3. In a bowl, mix together the egg and brown sugar, then stir in the melted Olivani mixture.
  4. Add flour, baking powder, ginger, and mixed spice.
  5. In a separate cup, mix baking soda with milk until dissolved, then stir into the batter.
  6. Pour the mixture into the prepared loaf tin.
  7. Bake for 30–40 minutes, or until a skewer comes out clean.
  8. Serve warm, smothered in more Olivani.
