Ingredients

  • 2 cups flour
  • 3 tsp baking powder
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup oil
  • 1 tsp vanilla
  • 1 cup yoghurt
  • 1 cup fruit (e.g. peaches, nectarines, plums, apricots, rhubarb; cook apples/pears until soft)
  • Brown sugar and rolled oats for topping

Method

  1. Preheat oven to 180°C.
  2. Beat together the egg, oil, vanilla, and yoghurt.
  3. In a separate bowl, add flour, baking powder, sugar, and chopped fruit.
  4. Gently combine all ingredients—do not overmix.
  5. Spoon mixture into muffin cases.
  6. Sprinkle tops with a pinch of brown sugar and rolled oats.
  7. Bake for 20–25 minutes, keeping an eye to avoid burning the tops.
