Ingredients
- 2 cups flour
- 3 tsp baking powder
- 1/2 cup sugar
- 1 egg
- 1/2 cup oil
- 1 tsp vanilla
- 1 cup yoghurt
- 1 cup fruit (e.g. peaches, nectarines, plums, apricots, rhubarb; cook apples/pears until soft)
- Brown sugar and rolled oats for topping
Method
- Preheat oven to 180°C.
- Beat together the egg, oil, vanilla, and yoghurt.
- In a separate bowl, add flour, baking powder, sugar, and chopped fruit.
- Gently combine all ingredients—do not overmix.
- Spoon mixture into muffin cases.
- Sprinkle tops with a pinch of brown sugar and rolled oats.
- Bake for 20–25 minutes, keeping an eye to avoid burning the tops.
