Ingredients

  • 2 1/2 cups dates, chopped
  • 1/2 cup water
  • 3 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp sugar
  • 1 tbsp cinnamon
  • 1/3 cup butter
  • Zest of an orange
  • 1 1/4 cups milk

Method

  1. Preheat oven to 220°C fan bake. Line a baking tray with baking paper.
  2. In a saucepan, simmer chopped dates with water over medium heat for about 10 minutes until tender. Drain any excess water and set aside.
  3. In a large bowl, mix flour, baking powder, salt, sugar, and cinnamon.
  4. Rub in the butter with your fingertips until the mixture resembles breadcrumbs.
  5. Add cooked dates and orange zest, and mix to combine.
  6. Pour in milk and mix gently with a fork or knife until just combined. The dough should be soft and sticky.
  7. Drop 12 blobs of dough onto the prepared tray.
  8. Bake for 10–15 minutes, or until golden brown.
