Ingredients

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup almond milk
  • 1/2 cup water
  • 1/4 tsp salt
  • 2 TBS melted Olivani

Method

  1. Preheat oven to 100°C to keep crepes warm as you cook.
  2. In a large mixing bowl, whisk together all ingredients except melted Olivani until smooth.
  3. Add melted Olivani to the batter and mix well.
  4. Heat a pan over medium heat with a little Olivani.
  5. Pour enough batter to thinly coat the base of the pan, tilting to spread evenly.
  6. Cook until lightly browned, then flip to cook the other side.
  7. Transfer cooked crepes to a plate in the oven to keep warm.
  8. Serve with your choice of toppings such as frozen berries, bananas, feijoas, shaved chocolate, yoghurt, or syrup.
