Method
- Preheat oven to 100°C to keep crepes warm as you cook.
- In a large mixing bowl, whisk together all ingredients except melted Olivani until smooth.
- Add melted Olivani to the batter and mix well.
- Heat a pan over medium heat with a little Olivani.
- Pour enough batter to thinly coat the base of the pan, tilting to spread evenly.
- Cook until lightly browned, then flip to cook the other side.
- Transfer cooked crepes to a plate in the oven to keep warm.
- Serve with your choice of toppings such as frozen berries, bananas, feijoas, shaved chocolate, yoghurt, or syrup.
