From Chelsea Winter
Ingredients
- 4 cups cabbage, finely sliced or chopped
- 1 carrot, grated
- 2 sticks celery, finely chopped
- 1/2 cup chopped herbs (e.g. coriander, mint, parsley)
- 1/2 cup roasted peanuts, roughly chopped
- 1/3 cup mayonnaise
- 1/2 tsp sesame oil
- 2 tsp lime or lemon juice
- 1 clove garlic, crushed
Method
- Prepare all vegetables and herbs, and place them in a large bowl.
- In a small bowl, whisk together mayonnaise, sesame oil, lime/lemon juice, and crushed garlic.
- Pour the dressing over the vegetables and mix well to combine.
- Stir through chopped roasted peanuts just before serving.
