Dinner Salad

Ingredients

  • 4 cups cabbage, finely sliced or chopped
  • 1 carrot, grated
  • 2 sticks celery, finely chopped
  • 1/2 cup chopped herbs (e.g. coriander, mint, parsley)
  • 1/2 cup roasted peanuts, roughly chopped
  • 1/3 cup mayonnaise
  • 1/2 tsp sesame oil
  • 2 tsp lime or lemon juice
  • 1 clove garlic, crushed

Method

  1. Prepare all vegetables and herbs, and place them in a large bowl.
  2. In a small bowl, whisk together mayonnaise, sesame oil, lime/lemon juice, and crushed garlic.
  3. Pour the dressing over the vegetables and mix well to combine.
  4. Stir through chopped roasted peanuts just before serving.
