Cheesy Broccoli

A simple, classic veggie side — steamed broccoli smothered in a creamy cheese sauce and baked until bubbling and golden.

Ingredients

  • 1 head of broccoli, chopped into florets
  • CHEESE SAUCE
  • 35g olivani or butter
  • 1/4 cup flour
  • 1 1/2 cups milk (or almond/soy milk)
  • 1/4 tsp grated nutmeg
  • 1 cup cheese (reserve a little for topping)

Method

  1. Preheat oven to 180°C fan grill.
  2. Steam broccoli for 3–5 minutes until vibrant green but still firm.
  3. Place in an ovenproof dish.
  4. To make cheese sauce
  5. Melt butter in a pot until sizzling but not browned.
  6. Stir in flour and cook for 1 minute.
  7. Add nutmeg and 1/2 cup milk, stirring constantly until thickened.
  8. Add remaining milk and continue stirring until thick and smooth.
  9. Stir in cheese (reserving a little for topping), and season with salt & pepper.
  10. Pour cheese sauce over the broccoli, sprinkle remaining cheese on top.
  11. Bake for 20 minutes until golden brown on top.
