A simple, classic veggie side — steamed broccoli smothered in a creamy cheese sauce and baked until bubbling and golden.
Ingredients
- 1 head of broccoli, chopped into florets
- CHEESE SAUCE
- 35g olivani or butter
- 1/4 cup flour
- 1 1/2 cups milk (or almond/soy milk)
- 1/4 tsp grated nutmeg
- 1 cup cheese (reserve a little for topping)
Method
- Preheat oven to 180°C fan grill.
- Steam broccoli for 3–5 minutes until vibrant green but still firm.
- Place in an ovenproof dish.
- To make cheese sauce
- Melt butter in a pot until sizzling but not browned.
- Stir in flour and cook for 1 minute.
- Add nutmeg and 1/2 cup milk, stirring constantly until thickened.
- Add remaining milk and continue stirring until thick and smooth.
- Stir in cheese (reserving a little for topping), and season with salt & pepper.
- Pour cheese sauce over the broccoli, sprinkle remaining cheese on top.
- Bake for 20 minutes until golden brown on top.
