Ingredients
- 16 dates (or 12 Medjool dates)
- 1 cup oats
- 1/2 cup walnuts *(or cashews as a substitute)*
- 1/2 cup fresh carrot, grated
- 1 tbsp chia seeds
- 2 tsp fresh ginger, grated
- 1 tsp vanilla extract
- Shredded coconut (for dusting)
Method
- Soak the dates in hot water for several minutes until softened. Drain and set aside, reserving the water.
- Add soaked dates and all other ingredients to a food processor.
- Blend until the mixture reaches a dough-like consistency. If too dry, add 1 tbsp of the reserved date-soaking water.
- Scoop and roll into bite-sized balls.
- Roll each ball in shredded coconut and place on a lined tray or plate.
- Refrigerate or freeze until firm.
