Carrot Cake Bliss Balls

Ingredients

  • 16 dates (or 12 Medjool dates)
  • 1 cup oats
  • 1/2 cup walnuts *(or cashews as a substitute)*
  • 1/2 cup fresh carrot, grated
  • 1 tbsp chia seeds
  • 2 tsp fresh ginger, grated
  • 1 tsp vanilla extract
  • Shredded coconut (for dusting)

Method

  1. Soak the dates in hot water for several minutes until softened. Drain and set aside, reserving the water.
  2. Add soaked dates and all other ingredients to a food processor.
  3. Blend until the mixture reaches a dough-like consistency. If too dry, add 1 tbsp of the reserved date-soaking water.
  4. Scoop and roll into bite-sized balls.
  5. Roll each ball in shredded coconut and place on a lined tray or plate.
  6. Refrigerate or freeze until firm.
