Ingredients
- 125g softened butter
- 1/2 cup sugar
- 1 cup self-raising flour
- 2 free-range eggs
- 3/4 cup milk
- 1 cup frozen mixed berries
- 1/2 cup dark chocolate buttons
- Yoghurt, to serve
Method
- Preheat oven to 180°C (160°C fan-forced).
- Combine butter, sugar, flour and eggs in a large bowl. Mix on high speed with an electric mixer for about 2 minutes.
- Stir in the milk until just combined.
- Lightly spray a shallow pie dish or baking tray with canola oil.
- Pour in the batter and top with chocolate buttons and frozen berries. (The berries will sink slightly during baking; press chocolate buttons into the batter.)
- Bake for 45 minutes, or until the pudding springs back slightly when touched.
- Serve warm with yoghurt or cold double cream.
