Ingredients

  • 125g softened butter
  • 1/2 cup sugar
  • 1 cup self-raising flour
  • 2 free-range eggs
  • 3/4 cup milk
  • 1 cup frozen mixed berries
  • 1/2 cup dark chocolate buttons
  • Yoghurt, to serve

Method

  1. Preheat oven to 180°C (160°C fan-forced).
  2. Combine butter, sugar, flour and eggs in a large bowl. Mix on high speed with an electric mixer for about 2 minutes.
  3. Stir in the milk until just combined.
  4. Lightly spray a shallow pie dish or baking tray with canola oil.
  5. Pour in the batter and top with chocolate buttons and frozen berries. (The berries will sink slightly during baking; press chocolate buttons into the batter.)
  6. Bake for 45 minutes, or until the pudding springs back slightly when touched.
  7. Serve warm with yoghurt or cold double cream.
