Ingredients
- 200g flour
- 120g sugar
- 5 tsp baking powder
- 1 tsp cinnamon
- Pinch of salt
- 2 large ripe bananas
- 60g dates, finely chopped
- 350ml milk
- 130g butter (melted)
- 2 eggs
- 1 tsp vanilla extract
- SAUCE
- 375ml water
- 1/2 cup brown sugar
- 2 tbsp golden syrup
- 20g butter, cut into cubes
Method
- Preheat oven to 180°C. Grease a baking dish.
- In a large bowl, mash bananas and mix with chopped dates, milk, melted butter, eggs, and vanilla.
- Add flour, sugar, baking powder, cinnamon, and salt. Stir to combine, then pour the mixture into the prepared dish.
- SAUCE
- In a small saucepan, heat the water, brown sugar, and golden syrup over medium heat, stirring until the sugar dissolves.
- Pour the hot sauce gently over the back of a spoon onto the pudding batter.
- Dot the top with cubes of butter.
- Bake for 30–40 minutes, or until golden brown and cooked through (a gooey sauce should form underneath).
