Banana & Date Self-Saucing Pudding

Ingredients

  • 200g flour
  • 120g sugar
  • 5 tsp baking powder
  • 1 tsp cinnamon
  • Pinch of salt
  • 2 large ripe bananas
  • 60g dates, finely chopped
  • 350ml milk
  • 130g butter (melted)
  • 2 eggs
  • 1 tsp vanilla extract
  • SAUCE
  • 375ml water
  • 1/2 cup brown sugar
  • 2 tbsp golden syrup
  • 20g butter, cut into cubes

Method

  1. Preheat oven to 180°C. Grease a baking dish.
  2. In a large bowl, mash bananas and mix with chopped dates, milk, melted butter, eggs, and vanilla.
  3. Add flour, sugar, baking powder, cinnamon, and salt. Stir to combine, then pour the mixture into the prepared dish.
  4. SAUCE
  5. In a small saucepan, heat the water, brown sugar, and golden syrup over medium heat, stirring until the sugar dissolves.
  6. Pour the hot sauce gently over the back of a spoon onto the pudding batter.
  7. Dot the top with cubes of butter.
  8. Bake for 30–40 minutes, or until golden brown and cooked through (a gooey sauce should form underneath).
