Ingredients
- Spinach or lettuce leaves
- 2 rashers bacon (or more!)
- 1 firm banana
- 1/2–1 avocado
- 1 tsp oil (for cooking bacon)
- DRESSING
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/4 tsp sugar
- 1/2 tsp crushed garlic
- Salt and pepper, to taste
Method
- Cook bacon in a pan with a little oil until crispy. Set aside to cool slightly, then chop into pieces.
- Slice banana and avocado.
- Arrange spinach or lettuce leaves on a plate, then top with banana, avocado, and bacon.
- Whisk together all dressing ingredients in a small bowl.
- Drizzle dressing over the salad just before serving.
