Avocado, Bacon, and Banana Salad

Dinner Salad

Ingredients

  • Spinach or lettuce leaves
  • 2 rashers bacon (or more!)
  • 1 firm banana
  • 1/2–1 avocado
  • 1 tsp oil (for cooking bacon)
  • DRESSING
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 tsp sugar
  • 1/2 tsp crushed garlic
  • Salt and pepper, to taste

Method

  1. Cook bacon in a pan with a little oil until crispy. Set aside to cool slightly, then chop into pieces.
  2. Slice banana and avocado.
  3. Arrange spinach or lettuce leaves on a plate, then top with banana, avocado, and bacon.
  4. Whisk together all dressing ingredients in a small bowl.
  5. Drizzle dressing over the salad just before serving.
